Fresh, wild-caught Salmon Grouper California Bocaccio Rockfish (Sebastes paucispinis), prized for its rich, mild flavor and tender, flaky texture. Slightly more succulent than other rockfish, bocaccio is excellent roasted whole, grilled, baked, or prepared Mediterranean-style with olive oil, lemon, and fresh herbs.
