Greenspot rockfish is excellent eating, like most rockfish:

• Flavor: Mild, slightly sweet, very clean (not “fishy”)
• Texture: Firm but flaky—holds together well when cooked
• Color (raw): White to slightly translucent
• Cooking versatility:
  • Great for pan-frying, grilling, or baking
  • Works well in fish tacos or chowder
  • Also good simply seasoned with salt, pepper, lemon, and butter
